if you go into the arcade mode and click on the pc then you can go to the videos option and all previously obtained scenes can be viewed without penalty (Cash Loss)

Running should be shift (that's what it is for me), and all three of the other stuff you mentioned at the end, you will need to open the inventory with space and just click the item you wish to activate

I do know once you activate the spray it just adds it to your hand, you will need to right click with it to actually use it so prepare it in advance
